The smell of coffee brewing in the morning. Of beans being ground, of a frothy cappuccino, of a steaming mug. Coffee is one of the most-loved smells in the world. No wonder it's found its way into perfumes. Here's everything you need to know, no jargon.
What is a coffee note?
In perfumery, a coffee note evokes roasted beans, a short, strong espresso or a café au lait. It's warm, slightly bitter, toasty, sometimes creamy. It makes a perfume addictive: you keep coming back to it, like your morning cup.
Coffee belongs to what we call gourmand notes, the ones that smell like cooking and baking. Notes that make you hungry more than they make you dream.
How do you put coffee in a perfume?
There are two main ways to do it:
- With a natural material: the scent is extracted from roasted beans, most often by CO2 extraction. The result is a very true-to-life extract, dark and powerful.
- With synthetic molecules: some molecules, like pyrazines, recreate the toasted, roasted effect. They make it possible to dose the coffee precisely and give it longevity.
Most of the time, the perfumer blends the two, then surrounds the coffee with other notes: vanilla, tonka bean, milk, caramel, cardamom. That's what's called an accord. Natural and synthetic, hand in hand: we tell you why in No more fragwashing.
What does coffee smell like in perfume?
It all depends on the recipe:
- Black coffee: bitter, roasted, almost smoky.
- Cappuccino, latte: creamy, milky, soft.
- Sweet coffee: caramel, praline, vanilla.
- Spiced coffee: cardamom, cinnamon, pepper.
Coffee comes through mostly in the heart and base of a perfume. It lasts well and pairs beautifully with warm notes.
A bit of history
For a long time, coffee kept a low profile in perfumery. It took off with the wave of gourmand perfumes in the 1990s and 2000s, when perfumers started to fully embrace the smells of the kitchen. Today, it's a classic that everyone loves, regardless of gender.

FAQ
Does a coffee perfume really smell like coffee?
Yes, but better. The perfumer keeps the warm, roasted side and rounds it out with creamy or sweet notes. No smell of cold coffee grounds, promise.
Is coffee perfume more of a winter thing?
It's especially comforting when it's cold out. But iced coffee is a summer drink too: a light, milky coffee can be worn all year round.
